Dealing with food allergies can be difficult, especially for snacks on the go. The strawberry granola bar recipe is perfect to alter ingredients to fit. I look for easy recipes we all can enjoy. One that has become a big hit for my boys is making granola bars from scratch, that does not fall apart!
Then I wanted to know if I could put fruit in the middle of a granola bar that would actually stay together too! I tinkered with variations and now this is our recipe. These strawberry granola bars never disappoint and that is why I use them as the go-to snack for our Frontier Homeschool Classes here in Florida.
2 Cups oats, 1 cup whole wheat or flour variation of your choice, 1 TBL cinnamon, 1 tsp salt, 1/4 C brown sugar, mix together in a large mixing bowl.
1/2 C Coconut oil, or canola oil, 1 egg, 1/2 C honey, 1tsp vanilla, 1/4 C of strawberry jam or your choice
Mixins: I add 1/4 C coconut flakes, and on occasion a few white chocolate chips, raisins, you can add whatever you like, about a 1/4 C full.
After mixing all ingredients together, except for the strawberry jam, spread 1/2 the mixture in the bottom of a 9″ square or 9 x 12 pan. Now, spread your jam over the top, using the back of a spoon works great. Then put the remaining mixture on top in dollops and pat it down with a spatula.
In our own granola bars, I add wheat germ and flaxseed (sometimes).
We have also used blueberry jam in the middle of the granola bars.
Bake at 350 for 30 minutes or until golden brown, cool for 10 minutes then cut and cool on a rack for about 20 minutes. The trick is to not let them stay in the pan past the cooling time. Cut them into squares and let them finish cooling on a rack. You have now made your own fruit-filled granola bars!! I put them in a cookie jar and they can stay fresh for up to a week. If you don’t have hungry kids hanging around. The bars in the photo were for friends, so I topped them with melted white chocolate chips. Ours seem to disappear quickly around here, so it has boy approval.
