I always seem to need a last minute gift. Do you? I enjoy giving homemade items like the pancake in a jar because I believe it is a thoughtful gift, and it definitely helps our budget.
Pancake mix in a jar is fun and easy. I keep many jars of preserves and jam we have made throughout the year and most of our family know they will find a jar under their Christmas tree. However, this year I found a quick and simple addition to our jarred up goodies!
We love pancakes as a weekend treat and I know most of our family and friends do too. These mixes can be tailored any way you like and change it up for the gift-giving occasion.
Grant is my right-hand man in the kitchen, especially if there may be snacking involved. Those dried fruit jars were full before we started.
We had a TON of dried apples that we made from an apple fiasco I will have to tell you later. Anyway, after filling the jars, I added a little baggie of dried apples on top to stir in the pancakes. You could add chocolate chips, nuts or store bought dried fruit if you like.
What you will need for 1 jar of holiday spice pancakes mix:
quart jar, I used wide mouth for easy scooping
1.5 cups of all-purpose flour
1.5 cups of whole wheat flour
(or just use 3 cups of all-purpose)
2 tsp salt
3 tbsp baking powder
1 tbsp cinnamon
1 tsp nutmeg
1/2 tsp ground cloves
Wisk all ingredients together and pour into your jar.
Add your topping in a baggie on top of the mix if desired. I found lots of small pieces of ribbon in my Christmas box.
These were perfect for the jars to make the pancakes pretty and add a directions tag.
On your label, you will want to give directions on making the pancakes.
Combine 1.5 cups of mix with 1 egg, 2 tbsp melted butter and 1 cup milk or
buttermilk. Add toppings as desired. This will make a serving of 6-8
pancakes. 2 servings per jar.
