Jerky Spice

Ingredients

  • 1 cup brown sugar
  • 1/2 cup six pepper blend
  • 1 teaspoon Prague Powder #1
  • 2 tablespoons Kosher salt
  • 2 teaspoons crushed red pepper flakes
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 tablespoons smoke powder
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 12 ounces pineapple juice
  • 3 tablespoons worcestershire sauce
  • 3 tablespoons soy sauce

Instructions

  • Start with 6 pounds of ground meat. Mix all dry ingredients in a bowl. Pour over mead. Add wet ingredients and mix thoroughly. Allow to cure for 24 hours before drying.
